Ever since the failure in Brisbane, i've been practicing for more than 2 months to perfect my version of this recipe.
YEAH! now i dare declare myself as a MASTER in cooking pasta aglio e olio. Listen up Siang, you may cook better carbonara, but don't challenge me in this!!
so yeah lemme present my version:
Ingredients:
- pasta of your choice (fettucine, linguine or angel hair spaghetti goes well)
- olive oil
- freshly minced garlic
- freshly crushed black pepper
- parsley flakes
- red chilli flakes (optional but taste much better if added)
- mushroom (optional)
Then, when the pasta is gonna be ready, prepare the sauce immediately. Heat up some olive oil in a pan and throw in the garlic, black pepper and parsley (red chilli flakes and mushroom too). I can’t tell you how much oil I use cause the trick lies in the approximation. The amount should be just nice to coat the pasta, not too dry not too wet ngam ngam hou. That’s the way I like it. Those aglio olio I ate in Italian restaurants are soaked in oil. My friend said it’s because the olive oil is the sauce but too much oil just gross me out. So yeah after much trial and error, now I can agak-agak perfectly heh.
Ok then quickly drain the pasta. Shake the excess water, don't want your pasta to be soggy eh. When the garlic is starting to turn brown, throw in the pasta and turn to the lowest possible heat. Stir it in a rapid random movement. Toss it a bit if can. Like me.
Add salt and pepper to taste.
And Tadaa there you have it, a yummy-licious dish. Sprinkle some parmesan cheese and parsley onto.
It is really the simplest pasta recipe. Cooking this every other day. Takes bout 15-20mins, mainly to wait for pasta to cook. Do try it sometime people! Happy cooking =)
